The thing is: is it possible to run with three screen BUT with one ultrawide screen as the center monitor.

    it would be ONE 1920x1080 + ONE 2560x1080 + ONE 1920x1080

The combined resolution would be 6400x1080

    I have a GTX 1080

Did a research long ago about this as I had a plan to make a setup with that style, if I remember right it is possible as a custom res, dont know if stuff like multiview would work
*I know for sure AMD supports that, don't know about Nvidia

Did you go to the track? Because in garage or in menu game, it works just in center monitor...

Unfortunately nVidia hates mixed monitors (aspect ratio, resolution, refresh rate, etc). But... since this game is DX9... you could try to use SoftTH.

I gave up trying to use different resolution monitors, and finally got 3 of the same. Much more enjoyable and it just works :)

I think AMD's good with mixing monitor sizes and/or resolutions with triple screen setups if I remember correctly
