Below are 2 videos with practice sessions:
-first one with the McLaren GT3 at Interlagos Stock Car, default setup, I get hotter temperatures & higher tyre wear on the right tyres.
-second one with the McLaren GT3 at Silverstone GP, default setup, I get hotter temperatures & higher tyre wear on the left tyres.
Could anyone give any suggestions on setup changes I can make to help decrease tyre temperatures & tyre wear?

Your temps are normal for these tracks over 30°C track temp (Silverstone even over 40°C). The tire widget shows not even full yellow and you regain 90°C all the time, which hints that only your tire surface is increasing temps temporarly, which is perfectly fine. Even wear balance looks alright.

Push less hard, use more TC and soften the car if you really need less tire temps but there is nothing unusual to see.

See what Silverstone does to left tires btw.

It's not possible to use setup changes to fix the L-R temperature discrepancy induced by lateral load transfer in fast corners that turn primarily in one direction. The lateral load transfer depends only on the centre of gravity height, the track width of the car, and the cornering force (the speed at which you take the corner). If the car has wings you can try running more of them (front and back) to compensate for the lack of mechanical grip. In GT3 cars you could try increasing the rear wing and adding positive rake by increasing the rear ride height to prevent a shift in the aero balance.

You should also open the front brake ducts by 1 click as they are exceeding 700 C at the end of hard braking zones. That will reduce tyre temperatures a bit as well.
