Only currently hearing stereo and does not seem to be a setting to change it within game or ini files. My 5.1 Audio works fine in Project Cars etc, I use HD audio out from Graphics Card HDMI through my AV Amp, works great with all games.
No it does not. Onto second reply, "upmix" is not same as mirroring display to side, ie. some receivers have some fake sourround out of stereo mix (far from ideal, but in case someone wants something from their rear speakers). Having front channels at the rear would indeed be bad idea. Sorry for not answering your question, was not intentional, but on the other hand if we did surround audio it would not be a secret.
