How do I tune it out?

I've used the Lotus and Brabham, and the latter is the only driveable one. They both have the obnoxious understeer present in a lot of the older formula cars. The Lotus simply refuses to keep straight under acceleration. That seems to be an issue with a lot of older cars in the game.

Tune it out with the differential and right foot settings.

The default setups for the Retro cars aren't great so it's worth borrowing a few setups from players in the TT mode and seeing how they do it. In particular the differential can make a big difference to the cars driving style so pay attention to what people are doing there. Don't necessarily borrow the setup of the fastest driver in TT, this can be very extreme, some of the mid placed drivers may be best for finding a race setup.

This can't be just setup related. Not one of those cars has proper useable weight transfer or lift off oversteer. You simply can't drive them with your right foot. This massive understeer, followed by snap oversteer seems to be something more crucial. Those are not the only cars with the same problems. Almost all cars have those problems, you just don't feel much of it in the downforce cars.

It shouldn't be necessary at all to search for setups, they should be driveable with their default setup.

Snap oversteer in high speed bends(>3rd gear)
I find it controllable but it feels a bit unreal but after a few laps I got used to it and when tyres got warmer it did not occur anymore not even by provoking it: it went into (more)understeer.
Lift off oversteer doesn't occur because of those superwide reartyres, just like irl. I guess.

    Cheers
