Just downloaded the game, and I'm frustrated.

It recognizes my Husinkveld pedals just fine, but won't take any inputs from my Simucube 2 Pro no matter what I try.

Is there a separate driver or plugin I need to download?

I know it's taking input, because when I go to assign, if I get to the lock, it says "Multiple assignments were found"

Press the e-stop so you don't have to fight the centering spring.
Assign the left axis by quickly turning the wheel left all the way and then return to center - don't hold it turned left. Assign the right axis the same way.

That's an issue of the Madness Engine that was already present in PC2.

turn your SC2 wheel faster, don't do it slowly otherwise it will exceed the bump stop and you get the error about multiple inputs. Don't ask me how I know this :p
