Well, I can only say things based on my own experience - I use 50 FOV in cockpit view and only had that kind of problem recently while testing...
I'm aware of this. But I tested F301 and hands do appear in cockpit view if you move your seat way to the back, so I guess OP uses very low FOV,...
It's because your seat is too far back. Move it forward a little :)
