    It's an opinion.
I very much prefer something that models things as they are and needs tuning cause it's not working as it should (if so please report abnormal behaviors in the bug section with proof) than something that will never be able to model things correctly because there is no adequate model behind in the first place. Reason being that the first case can be fixed, the second by all evidence has nothing to be fixed.
In my experience camber (and I-M-O temps changes) do change cars behavior, but obviously I have not tried all of the 100+ cars. If you found one where camber and temps changes do not have effect feel free to report them with proof and devs will definitely want to take a look ;)

You can try the Camaro SS or the Mini JCW that should have 1.8-2.0 hot pressures and see how they feel with deflated tyres.

35psi (2,4bar) is the OEM recommendation for the Camaro SS. Pressure of up to 2,8 bar are standard nowadays, and the pressures for "track use" as low as 24psi that where floating around in the past are not advisable anymore. A 0,2 bar reduced pressure is the minimum safe pressure for modern tyres. I can confirm that from first hand experience.

on my first trackday at Nords I ran 1.8bar instead of 2.5, all I got was an instable car and no grip gain. it was even harder to come around the corners. Turned out 2.2 was much, much better, and today I dont use reduced pressure at all.

I think the "theories" that are used regardig tyre pessures in games are from 20 years ago.

Use IMO to determine optimal contact patch and optimal pressure.

An idyllic "optimal" pressure does NOT = optimal contact patch. The load variations and tire temps vary too much.

Using the IMO method, pressure and camber does indeed primarily effect cornering characteristics and rolling resistance.

(For example, increasing LF camber at Road Atlanta specifically for the carousel will change the traction of the front vs the rear to make that corner less punishing on the LF. It may be marginal, but that with other marginal changes (like damping and balance) in the setup that add up to less heat and wear on the LF overall.)

The subject of whether the # on the screen that represents bar or pressure could in some way come closer to the contemporary sim racing perception is a subject of development. However, the on track effects of this # change would most likely be purely based on player perception and nominal to performance on track.

Do what race teams do and use the Telem HUD as it acts as a live onboard pyrometer to set up your tires.

ps. Formula SAE teams are known to run pressures as low as 10psi, F1 13-15psi, road cars upwards of 40psi. You see the variation here. Tire size matters and its all about the contact patch at the end of the day.
